Hello Leif, it´s a tradition from south part of South America do cook the meat this way. It came from Argentina (the Pampas) and we, southern Brazilians, use it as we call Churrasco (in the same way Fogo de Chão do in Minneapolis). We eat with white rice, french bread, cassava flour and a potatoes salad with a maionese cream. It´s delicious.
